Oh yum!

I have been wanting to do this recipe for more than a year now, I’m not exactly sure what took me so long but I’m glad I made it and I’m even more glad that I had guests over to share it with. My husband reallllyyy enjoyed this, which is ironic because every time I told him about this recipe he had a ‘meh’ face on. IN YOUR FACE, ‘MEH’ FACE!

Slow Cooker Beef Stroganoff

  • 1 1/2 lb beef sirloin strips
  • 3 tbsp flour
  • 3 tbsp oil
  • Salt and pepper
  • 2 onions, chopped
  • 4 tbsp butter
  • 1 lb sliced mushroom
  • 3 cloves, garlic
  • 1/2 cup red wine
  • 1 cup beef broth
  • 1/2 tsp paprika
  • 1 tsp Dijon mustard
  • 3/4 cup plain yogurt
  • Fresh chives, chopped
  • Egg noodles

  1. Toss the meat in the flour and brown in a skillet over high heat in the oil. Season with salt and pepper and place in the slow cooker.
  2. In the same skillet, brown the onions and mushrooms in the butter. Add garlic and cook for another minute.
  3. Deglaze with wine and pour into the slow cooker. Add the broth, paprika and mustard. Reserve the yogurt and chives for later.
  4. Cover and cook on low heat for 4 hours. This recipe will keep well on warm for as long as needed.
  5. Mix yogurt and salt and pepper right before serving. Serve with egg noodles and sprinkle chives on top.
