chocolate peanut butter cupcakes

For birthdays, I normally volunteer to make dessert that the birthday gal/guy will like. When it comes to my sister, I can experiment because she loves everything. I often make something that I would love to eat for my own birthday but I try to keep it interesting.

Last year I made a vanilla cake so this year I wanted to make something more chocolatey. It’s no secret, I’m crazy about peanut butter and chocolate or any other nut/choco combination for that matter so when I saw this recipe, I knew it was going to be perfect.

My husband described it as breakfast and dessert rolled into a cupcake. In fact, my mother confessed to me that she ate one for breakfast. She would never have allowed me to do that as a kid so I imagine it scored high points with her to force her to break rules like that. Honestly, I would have done the same thing, but little eyes were looking at me and I would have needed to share half of mine. hahaha!

 

Chocolate peanut butter cupcakes

Yield: 18 cupcakes + more than enough frosting.

Chocolate  cupcakes ingredients:

  • 1 ½ cups all-purpose flour
  • ⅔ cup cocoa
  • 1  cups sugar
  • 1 tsp baking soda
  • ½ tsp  baking powder
  • ½ tsp salt
  • 2 eggs
  •  cup oil
  • 1 tsp vanilla
  • ⅔ cup milk
  • ⅔ cup hot water

Chocolate  cupcakes directions:

  1. Preheat oven to 350°F and line cupcake tray with liners.
  2. Sift dry ingredients together in a large bowl. Add eggs, oil, vanilla and milk and mix until combined. Add hot water and mix. The batter will be very liquid.
  3. Use a spouted measuring cup to pour the batter into the liners (about ⅔ full).
  4. Bake for 15 minutes. Cool completely before frosting.

Chocolate frosting ingredients:

  • ½ cup butter, room temperature
  • 1 tsp vanilla
  • 2 cups icing sugar, sifted
  • ¼ cup cocoa, sifted
  • 1 tbsp milk

Chocolate frosting directions:

  1. Cream the butter until light and fluffy, add vanilla and mix. Slowly add icing sugar and cocoa. Add milk and mix until creamy and smooth. Frost cooled cupcakes.

Peanut butter frosting ingredients:

  • ½ cup butter, room temperature
  • 1 tsp vanilla
  • ⅔ cup creamy peanut butter
  • 2 cups icing sugar
  • 1 tbsp milk

Peanut butter frosting directions:

  1. Cream the butter and peanut butter until light and fluffy, add vanilla and mix. Slowly add icing sugar. Add milk and mix until creamy and smooth. Frost cooled cupcakes.
