Peanut Butter Banana Chocolate Chip Bread

When I was young, I used to live in an area where power failures were quite common. When that happened, my father would stomp around the house, imitating a big gorilla. My brothers and I would run and hide from him or else he would turn us into gorillas. Most of the time though, mainly because I was too afraid of hiding in the dark, I would grab on to his back and become his baby gorilla. Those are my fondest memories from when I was young.  

Why did I think about this story? because when I tasted this recipe it reminded me of my dad’s peanut butter, banana, toasted sandwiches. They are hands down the best in the world.   


Peanut Butter Banana Chocolate Chip Bread

Warning: this recipe makes for a smaller loaf than what I’m used to making. See picture.


1 cup all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup sugar
1/4 cup brown sugar
1/4 cup canola oil
1/4 cup peanut butter
1 egg
2 ripe bananas, mashed
1 tsp vanilla
1/2 cup milk chocolate chips (tossed in a bit of flour)



  1. Preheat oven to 325F. Flour and butter a loaf pan (or 6 mini loaf pans).
  2. In a mixing bowl, whisk all dry ingredients and sugars together. Mix in the egg, bananas and vanilla. Fold in the chocolate chips.
  3. Bake for 40-50 minutes* or until a toothpick/wooden skewer comes out clean when inserted.

*My loaf pan is stoneware so it took a bit longer to bake. Yours might not take that long. If baking in mini loaf pans, it should take about 20 minutes.
