Since I had so many lemon peels and a few lemons left from my lemon pie, I decided to make some lemon infused simple syrup and turn that into Lemon Soda. SUCCESS! this stuff is great!! I normally can’t stand soda but I thought it would be fun to try anyway. I think that by controlling the ingredients, I got to enjoy it and tweak it to my liking.
- 1 1/2 cup water
- 1 1/2 cup sugar
- Organic* Lemon peels without pith (regular lemon has lots of pesticide on the peel)
- 1/2 cup Fresh Lemon Juice
- 4 cups Sparkling Water
- In a saucepan, combine the water with the sugar over medium heat. Stir regularly until the sugar has dissolved. Add the peels, cook for 10 minutes. (Optional: At this point you can either discard the peels or turn them into candied lemon peels by dipping them in white sugar and letting them dry to eat later). Let the syrup cool to room temperature.
- Put all ingredients in a pitcher and stir to combine.
